Informations

ingredients for pasta dough - 2 people

  • 180/200 g flour 00 (white flour extra fine)
  • 2 eggs medium size, organic
  • 2g salt

ravioli pasta filling:

  • 2 parts of ricotta
  • 1 part di parmigiano
  • Salt, pepper and oil

Pasta size

  • Tagliatella 0.5 cm
  • Pappardella 1.3 cm
  • Tagliolino 0.3 cm
  • Ravioli 3×3 // 4×4

Preparation

Pasta with sauce

Fettuccine

Cook the fettuccine in water and in the meanwhile, prepare a pan. In this pan, melt the butter with a little extra virgin olive oil.
At this point, the pasta is ready (4/5 minutes) so put everything in the prepared sauce and mix together with the grated Parmigiano Reggiano and a little basil (if you want, not necessary). The dish is ready to serve.

Ravioli

Cooking the ravioli in water and in the meanwhile, put the extra virgin olive oil, San Marzano tomatoes and basil in the pan and let everything cook for 4/5 minutes. This is also the time needed to cook the ravioli. When ravioli are ready, put them in the pan and mix with the grated Parmesan.
Garnish with fresh basil and serve them on the plate.
